Clams in Red Sauce

Fancy a little clams in red sauce? Jerry is your guy with this simple recipe.

1 tbsp olive oil
1 medium-sized minced shallot
1 minced garlic clove
1 pinch red pepper flakes
½ cup clam juice
½ cup white wine
¼ cup white beans
1 piece cooked spicy sausage, diced
½ cup red sauce
1 dozen clams
Pkg of linguine

  1. Heat oil in sauté pan. Add shallots, garlic, pepper flakes, and cook for 2 minutes on medium heat.

  2. Add clam juice and wine. Cook and reduce on high for 2 minutes.

  3. Add beans, sausage, red sauce, and clams. Cover until clams open (about 4 minutes).

  4. Toss in linguine. Plate and top with grated parmesan and fresh basil.
