This week we’re taking boring, basic tilapia to a whole new level. This dish appears on the menu at the Flour City diner for $14, but you can make it at home.
Flour City Diner Tilapia
First, cook a piece of tilapia - nothing special. It’s the additions that will make the meal.
Citrus Beurre Blanc
1 small shallot, minced
1/4 cup white vinegar
1/4 cup white wine
Reduce these ingredients until almost all liquid is gone.
Add 1 tablespoon of heavy cream.
Slowly whisk in ½ lb (up to 1 lb, your preference) of cold, unsalted butter in small pieces.
Don’t let the sauce boil.
Keep just warm enough so the sauce does not break.
Lemon Marmalade
Chop 3 lemons into 1/2 inch pieces, removing seeds.
Cover with water in a small sauce pan and bring to a boil.
Strain and add fresh water, and boil again - do this three separate times.
Then, on the fourth time, add 1/2 cup of sugar and 1 teaspoon of salt.
Slowly simmer for 60 to 90 minutes until liquid is thick and syrupy.
Chill for at least one hour.
Add beurre blanc first to the cooked tilapia, then adding lemon marmalade on top.
