Holiday Pie Filling

Ingredients
12-14 Gala & Granny Smith apples, peeled, cored and sliced
1/2 c. (one stick) unsalted butter
3/4 c. brown sugar, firmly packed
1/4 c. granulated sugar
1 tsp salt
2 tsp ground cinnamon (more if favorable)
1/2 tsp fresh ground nutmeg
1/8 tsp allspice
zest from 1/2 lemon and 1/2 orange
1/4 c. dried cranberries ("Craisins")
1/4 c. golden raisins
1/4 c. pecans, chopped
pie crust

Combine all ingredients in a large soup pot, and cook over medium heat, stirring constantly, but softly, until the apples are al dente. Remove from heat.

Cool mixture for at least 2 hours, or overnight.

Pour cooled mixture into a pie crust, cover with the top pie crust, coat with an egg wash and sprinkle on about one tablespoon granulated sugar.

Bake at 500°F for 15 minutes, then turn down the oven to 350°F, and continue to bake for 40 minutes.  After 20 minutes, check the pie, and turn it, if necessary (if your oven heats unevenly).
