Recipe for Breakfast Frittata: Soul Plate of the Week

Flour City Diner Breakfast Frittata

Start with a no-stick pan. Melt 1 tbsp of butter.

Add to the pan: sliced sausage, chopped bell pepper, chopped onion, cooked chunks of potato

Saute for several minutes.

Whisk three eggs and pour the eggs into the pan. Scramble together.

Flip the mixture and top with shredded mozzarella cheese. Wait 30 seconds, flip again. 

When the cheese turns golden brown, you are finished!

Chef's note: This dish is so versatile, and lends itself to whatever ingredients you prefer. Jerry likes to add a pinch of salt and pepper, along with chopped herbs from his garden. You can add all manner of spicy or mild sausage, or make it vegetarian by adding broccoli and a variety of other vegetables.
