Soul Plates Recipe of the Week: Caprese Heirloom Salad
Start with a variety of your favorite heirloom tomatoes; in the video you'll find some strangely and beautifully shaped tomatoes from Gentle's Farm Market in Penfield. They'll be in season into September, and they're bursting with flavor.
Pine nuts, toasted
Slice the mozzarella and heirloom tomatoes, staggering them one after the other. Top with chopped basil. Serve over fresh greens.
1 tablespoon balsamic vinegar
2 tablespoons extra virgin olive oil
1 teaspoon dijon mustard
1 teaspoon of minced shallot
pinch of salt, pinch of pepper
Put all ingredients together with the exception of the olive oil. Then, slowly whisk olive oil in.
Drizzle over the caprese salad.
