Roasted Corn Crab Cakes
Ingredients for cakes:
1 lb. picked-through crab meat
½ crushed Ritz crackers
1 ear fresh corn kernels, roasted
3 green onions chopped fine
½ cut peppers red & bell mix
¼ cup Mayo
1 egg
1 tsp. Worchester sauce
1 tsp. dry mustard
½ lemon juice
¼ tsp garlic powder
1 tsp. salt
Dash of tabasco
Flour for dusting
1/2 cup peanut oil
Sauce:
¼ cup mayo, 1 tblsp.
Preparation:
- Mix all except flour
- Heat oil & sauté
- Shape mixture into small patties and fry
