Ingredients
2 cups pecans
2 cups vegetable oil
1 teaspoon cinnamon
1/4 cup sugar
1/8 teaspoon cayenne pepper

And to create simple syrup:
2 cups water
2 cups sugar

Directions

You’ll need two small pots. Create the simple syrup by heating the sugar and water together.

In separate pot, bring vegetable oil to heat (about 350°F). Add pecans, occasionally stirring for 4-5 minutes until the pecans turn a mahogany color. Immediately transfer pecans to pot with simple syrup. Add cayenne pepper and stir occasionally for 4-5 minutes. In a bowl, add cinnamon and the ¼ cup of sugar. Transfer pecans into this bowl, tossing until pecans are coated. Lay on a cookie sheet to dry.

When they cool they become crunchy, but when they’re warm they’re even better!
