Wegmans to Build Cheese-Aging Facility

Chili, N.Y. – Wegmans plans to build a facility to age cheese, according to a tax abatement public hearing notice with the County of Monroe Industrial Development Agency.

The 12,300-square foot building would go at 249 Fisher Rd. in Chili, next to the company’s corporate campus.

The notice says the facility will be “used by the Company to ripen soft-ripened and washed-rind cheeses, like brie and other specialty cheeses, in a process called 'affinage.'"

A 2011 New York Times article described affinage as the “careful practice of ripening cheese…a series of tedious, ritualized procedures (washing, flipping, brushing, patting, spritzing) that are meant to inch each wheel and wedge toward an apex of delectability.”

The notice says Wegmans is seeking sales and property tax exemptions. No further information was available Sunday on the monetary benefit, employment figures and opening date of the cheese facility.
