Holiday Pie Filling

12-14 Gala & Granny Smith apples, peeled, cored and sliced
1/2 c. (one stick) unsalted butter
3/4 c. brown sugar, firmly packed
1/4 c. granulated sugar
1 tsp salt
2 tsp ground cinnamon (more if favorable)
1/2 tsp fresh ground nutmeg
1/8 tsp allspice
zest from 1/2 lemon and 1/2 orange
1/4 c. dried cranberries ("Craisins")
1/4 c. golden raisins
1/4 c. pecans, chopped
pie crust

Combine all ingredients in a large soup pot, and cook over medium heat, stirring constantly, but softly, until the apples are al dente. Remove from heat.

Cool mixture for at least 2 hours, or overnight.

Pour cooled mixture into a pie crust, cover with the top pie crust, coat with an egg wash and sprinkle on about one tablespoon granulated sugar.

Bake at 500F for 15 minutes, then turn down the oven to 350F, and continue to bake for 40 minutes.  After 20 minutes, check the pie, and turn it, if necessary (if your oven heats unevenly).
